Pumpkin Muffins

IF you're in the mood for pumpkin (with the Fall season here, I definitely was), but don't want to make bread or a pie, try these muffins! I made them this weekend; they're a nice treat!

1 1/3 c. sugar
1/2 c. butter
2 eggs
2 c. flour
4 t. baking powder
1 t. cinnamon
1/2 t. salt
1 c. canned pumpkin
4 T. milk

Cream together sugar and butter. Add eggs and beat well. In a separate bowl, combine flour, baking powder, cinnamon, and salt. In another mixing bowl combine pumpkin and milk. Add flower mixture and pumpkin mixture alternately to creamed mixture, beating well after each addition. Spoon into greased muffin tins and bake at 350 degrees for 18-20 minutes. Makes about two dozen muffins.

Fall makes me think of apples and pumpkins! We made applesauce yesterday - SO good!

Those sound yummy, I will have to try them! By the way, there is a crop this weekend in Salina. All day Saturday, cost is $5. You are all welcome to come if you are interested in going to the crop!

Yummy! I love baking with pumpkin in the Fall!!

Here's a recipe for some pumpkin chocolate chip cookies I made a few weekends ago that turned out really good. . .
1 1/2 cups flour
1 1/4 cups sugar
1 1/2 cups pumpkin
3/4 cup canola oil (I use olive oil instead)
1 1/2 egg
1 1/2 tsp vanilla
1 1/2 tsp cinnamon
3 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp milk
1 cup chocolate chips (we like dark chocolate)

Directions:
Dissolve baking soda and baking powder into wet/soft ingredients. Add remaining dry ingredients. Mix well. Stir in chocolate chips. May want to slightly cool dough for a few minutes in freezer to make it easier to work with. Spoon onto cookie sheet with tablespoon.

Heat oven to 375 degrees. Bake for 10-12 minutes. Makes 35 medium-sized cookies.
